Soup's On

A dark and dreary day.
Rain is falling.
The perfect time to warm up with a hearty bowl of homemade soup.

Cabbage and Bean Soup

Navy or Northern Beans
Ham Hock
Smoked sausage or Kielbasa sliced
Chicken Stock
28oz can of whole tomatoes
Bay Leaf
Salt and Pepper
Basil and thyme to taste.

Soak beans overnight, discard water, add chicken stock, ham hock, smoked sausage, herbs, and seasoning, bring to the boil and then simmer for one hour.

Add chopped cabbage, onions, carrots, celery, chopped tomatoes,  continue to simmer for an additional hour and a half.
Add water if needed.

Serve with buttermilk cornbread, or a nice crusty French loaf.

That looks so good. I am boiling eggs for a tuna salad. When I make that soup I shred some white monterey jack cheese on top with a dollop of sour cream. Wish I was having that soup.

Jo, It is soup time of the year. I love soups and stews during cold weather. Any kind is good too. I like corn muffins with soups to make it a hearty meal. Stay warm there. Blessings, xoxo, Susie

I love noodle soups ... any kind .. although I don't eat meat so I am talking about any kind of noodle.

My newest favorite is do your broth however you like it .. I prefer vegetable or chicken or sometimes I find turkey broth (excellent rich flavor ) and I do the usual sauce of celery and onions , carrots etc then pour in the broth and let it bubble .... then ...

I throw in mini ravioli .. any kind of filling you like ... a hearty tasty soup.
Enjoy :)
